بررسی میزان شویش آلومینیوم از ظروف آلومینیومی در اثر تهیه غذاهای ایرانی

<p><strong>سابقه و هدف:</strong> استفاده از آلومینیوم در زندگی روزمره، موجب افزایش مصرف آلومینیوم شده است. مواد غذایی نیز از ترکیبات متنوع شیمیایی ساخته شدهاند. از اینرو امکان برهمکنش بین این مواد و سطح ظروف پخت و پز آلومینیومی، در هنگام پخت غذا وجود دارد. آلومینیوم عامل ایجاد برخی از بیماریها در انسان است. طبق مصوبه کارشناسان سازمان بهداشت جهانی، مقدار قابل تحمل دریافت هفتگی آلومینیوم 7 میلیگرم بر کیلوگرم وزن بدن است. این پژوهش بهمنظور ارزیابی میزان شویش آلومینیوم، از ظرف پخت و پز نو و مستعمل آلومینیومی توسط سه غذای متداول ایرانی انجام شده است. </p><p><strong>مواد و روشها:</strong> غذاهای انتخاب شده، مربای بِه، برنج و قیمه بوده که در ظروف پیرکس، آلومینیومی نو و مستعمل دو بار پخته شدند. مقدار آلومینیوم نمونههای غذایی، پس از هضم اسیدی در نیتریک اسید و پرکلریک اسید، بهوسیله دستگاه طیف سنج نشر اتمی پلاسمای جفت شده القایی اندازهگیری شد. مقادیر آلومینیوم غذاها بر حسب وزن مرطوب و خشک گزارش شدند. </p><p><strong>نتایج:</strong> میزان آلومینیوم شویش یافته با تفریق مقادیر آلومینیوم در ظروف پیرکس و آلومینیومی محاسبه شد. این مقادیر برای قیمه، مربا و برنج که در ظروف نو تهیه شده بودند، بهترتیب عبارت بودند از: 72/20، 35/26، 45/2 و برای ظرف مستعمل عبارت بودند از: 59/23، 76/9، 63/11 (mg/Kg وزن خشک غذا). </p><p><strong>نتیجهگیری:</strong> در صورت مصرف روزانه 100 گرم از غذاهای مذکور تهیه شده در ظروف آلومینیومی مقدار ورود فلز آلومینیوم کمتر از مقادیر مجاز اعلام شده توسط مراجعبین المللی است. </p>
<p><strong>Background:</strong> The use of aluminum in everyday life leads to increasing in Aluminum consumption. Food stuffs are made from various chemical compounds. Therefore, an interaction between these compounds and the contact surface of aluminum cook wares during cooking process is possible. Aluminum has been blamed for several human diseases. According to the approval of Joint FAO/WHO expert committee on food additives, the Provisional Tolerable Weekly Intake of aluminum is 7 mg /kg body weight. This study was carried out to evaluate the leaching content of aluminum from new and used aluminum cook wares to three common Iranian foods. </p><p><strong>Materials and Methods:</strong> The selected foods were quince jam, rice and Gheimeh which cooked twice in a pyrex, new and used aluminum cookwares. Aluminum in cooked foods was determined by inductively coupled plasma after wet digestion with nitric acid and perchloric acid. The aluminum values in foods were reported in terms of wet and dry weight of the foods.</p><p><strong>Results:</strong> The leaching aluminum values were calculated by subtracting the aluminum content of foods cooked in the pyrex and the aluminum cookwares. The values for Gheimeh, jam and rice prepared in the new cookware were 20.72, 26.35 and 2.45, and for the used cook wares 23.59, 9.76 and 11.63 (mg/Kg dry weight), respectively. </p><p><strong>Conclusion:</strong> In case of the daily consumption of 100g of the mentioned foods which is prepared in aluminum cookwares, uptake of the metal aluminum is less than the internationally recommended (WHO) maximum permissible limits. </p>
